This is a very tasty salad, and very different to the common ‘lettuce and tomatoes’ type of salad you may be accustomed to. It’s refreshing for the taste buds!

 

Serve on its own, or as a side with your favourite meat.

INGREDIENTS

 

  • 2 tbsp olive oil
  • 3 medium zucchini, thinly sliced
  • Juice of ½ lemon
  • 1 red chilli, deseeded and finely chopped (optional)
  • About 125 grams green beans, trimmed
  • A good handfuls of salad greens
  • 12-18 semi-dried tomatoes (optional)
  • A handful of mint, finely shredded (optional)
  • Tahini Dressing (recipe below)

INSTRUCTIONS

 

  1. For the zucchini: heat the olive oil in a large frying pan over a fairly high heat and cook the zucchini in batches, tossing them occasionally, until tender and browned on both sides.
  2. When cooked, transfer to a serving bowl.
  3. Season generously with salt and pepper, add the lemon juice and chilli and toss together well.
  4. For the beans: bring a pan of salted water to the boil. Tip in the beans and blanch for 1-2 minutes. Drain, then dunk in icy cold water to refresh (this makes sure they remain vibrant and green in colour and crunchy).
  5. To serve, mix the rest of the ingredients in and add the tahini dressing (see below).

 

INGREDIENTS

 

  • ½ tsp garlic oil, or ½ garlic clove, crushed
  • 2 tbsp hulled tahini
  • Finely grated zest and juice of ½ lemon
  • Juice of ½ orange
  • ½ tsp clear honey
  • 2 tbsp olive oil
  • Sea salt and pepper to taste

INSTRUCTIONS

 

Put all the ingredients in a jar and stir well. If too thick, thin it down with a little water.
